| Squirrel Jambalaya
4 squirrels, disjointed 2 cups of chopped onions 1/2 cup of chopped celery 1/2 cup of chopped green pepper 2 cloves of garlic, chopped 2 cups of rice 3 tablespoons of chopped green onions Salt and pepper to taste
Brown the squirrels in a Dutch oven in about 1/2 cup of hot fat. Add the onions, celery, green pepper and garlic and cook until the vegetables are tender. Add 3 1/2 cups of water, rice, green onions, salt and pepper, then cover. Simmer for about 1 hour or until the squirrel is tender. 8 servings |
