| Pot Roasted Dove
6 dove salt and pepper to taste 1 clove of garlic, minced 1/2 small onion, chopped 1 teaspoon of minced green pepper 1 stalk celery, chopped 1 tablespoon of chopped ham skin 1/4 cup of salad oil 1 tablespoon of flour 1/4 cup of sherry 1 tablespoon of chopped onion tops 1 tablespoon of minced parsley 1 can of mushrooms
Season the dove with salt and pepper. Combine the garlic, onion, green pepper, celery and ham skin and stuff in the dove, then brown the dove in the hot oil in a skillet. Remove the dove from the skillet and stir in the flour and salt and pepper to taste. Brown the flour mixture lightly. Return the dove to the skillet and add 2 cups of water and the sherry. Cover and simmer until the dove is tender. Add the onion tops, parsley and mushrooms, then cook for 10 minutes longer. Serve with rice. |
