Fried Quail -  Dress and chill quail. Soak in light cream for 2 hours. Then dredge birds with flour and seasonings. Fry in 1/4 inch shortening in skillet until brown, then lower heat to simmer and cook 40 to 45 minutes longer, turning occasionally. Remove birds and make cream gravy from the drippings
