| Goose Stuffed with Sauerkraut
1 goose 1/2 pound of bacon, diced 2 large cans of sauerkraut 3 apples, grated salt and pepper to taste
Place the goose in a baking pan. Bake at 400ºF. for 20 minutes. Fry the bacon until crisp in a skillet, then remove the bacon and drain. Pour off all the drippings except 1/4 cup, then add the sauerkraut and apples to skillet.. Cook for 10 minutes. Add the bacon and toss. Season the goose with salt and pepper, then stuff cavity with half the sauerkraut mixture. Cover. Bake at 300ºF. until goose is tender and legs move easily. Place the goose on a platter. Reheat the remaining sauerkraut mixture and arrange around the goose.
