Turnip Pudding

8 fresh turnips, peeled and sliced ( about 2 1/2 pounds)
1 cup of water
1/2 teaspoon of salt
1/4 cup of chopped onion
2 tablespoons of butter, melted
1/4 cup of milk
2 large eggs, lightly beaten
1/2 teaspoon of salt
1/4 teaspoon of pepper 

Combine the first 3 ingredients in a saucepan and bring to a boil. Cover and cook over medium heat for 40 minutes or until tender. Beat the turnip at medium speed with an electric mixer for 5 minutes. Set aside. Cook the onion in butter in a saucepan over medium high heat, stirring constantly, until tender. Remove from the heat, stir in the turnip, milk, and the remaining ingredients. Spoon the mixture into a greased 8 inch square baking dish. Bake at 350ºF. oven for 35 to 40 minutes or until set. Serve immediately. Makes 6 servings
