| | Swiss Spinach Quiche
1 medium onion, chopped 2 tablespoons of butter 8 ounces of Swiss cheese, shredded 2 tablespoons of flour 1 cup of heavy cream 3 eggs, beaten 1/2 teaspoon of salt, dash pepper One 10 ounce package of frozen spinach, cooked and drained 1 frozen pie shell
Sauté' onion in butter until translucent. In small bowl, toss the cheese with the flour. In second bowl, combine cream, eggs, and seasoning. Add cheese mixture, onions, and spinach. Mix well. Pour into crust and bake 350ºF oven for 1 hour. Serves 8 |
