| Orange Flavored Quinoa
1 cup of quinoa 1 cup of cold water 1 cup of orange juice 2 teaspoons of grated orange rind 1 teaspoon of unsalted butter or regular butter
Combine the quinoa, water, orange rind, and butter in a heavy 3 quart saucepan. Turn heat high until quinoa starts to boil. Stir once with fork. Reduce heat, cover and simmer 12 to 14 minutes until liquid is absorbed. You may have to add a bit more orange juice is quinoa is not moist enough. Serves 4
