| Company Cauliflower Casserole
1 medium cauliflower, cut into flowerets Vegetable cooking spray 1/2 teaspoon of salt 1/8 teaspoon of pepper 1/2 cup of plain, unsweetened low fat yogurt 2 tablespoons (1/2 ounce) of shredded low fat process American cheese 1 teaspoon of sesame seeds, toasted
Cook cauliflower in boiling water to cover in a medium saucepan 8 minutes or until tender. Drain well. Place half of cauliflower in a 1 quart casserole dish coated with cooking spray; sprinkle with salt and pepper. Top with half each of yogurt and cheese. Repeat layers with remaining cauliflower, yogurt and cheese. Sprinkle with sesame seeds, and bake at 350ºF. for 20 minutes or until thoroughly heated. Yield 10 servings
