Apple Walnut & Whiskey Stuffing

2 cups of golden raisins
2 cups of Tennessee Whiskey
1 pound of bacon, minced
4 onions, chopped
2 tablespoons of garlic, chopped
4 apples, chopped
1 1/2 cup of fresh fennel, minced
1/2 cup of celery, minced
3 cups of chopped walnuts
2 teaspoons of mace
2 teaspoons of sage
2 teaspoons of thyme
Salt & pepper to taste
8 cups of fresh bread crumbs

Soak raisins in whiskey overnight. The next day, simmer raisins and whiskey together for 10 minutes. In large sauté pan, render bacon over moderate heat. When bacon is half cooked, add onions, apples, fennel and celery. Cook, stirring frequently, for approximately 10 minutes. Remove from heat, add remaining ingredients. Bake in a covered pan at 350ºF. for 45 minutes.
