| Southern Sweet Potato Biscuits
1/2 cup of melted butter 3/4 cup of cooked mashed yams 1/2 cup of milk 1 1/4 cups of sifted flour 3 teaspoons of baking powder 1/2 teaspoon of salt 1 tablespoon of sugar
Beat the melted butter into the mashed yams and stir in the milk. Sift the dry ingredients together into the yam mixture admix well. Place dough on a floured surface and pat it smooth. Roll it out 1/2 inch thick and cut with a 2 inch cutter. Place on a lightly greased cookie sheet and bake in oven preheated at 450ºF. for 15 to 20 minutes. Makes about 18 biscuits |
