| Southern Lentils Provencal
1/2 pound of dried lentils 2 1/2 pints of boiling water 1/2 pound of lean salt pork, sliced 1/2 bay leaf, crushed 1 garlic clove, minced 1 onion, chopped 1 tablespoon of bacon drippings salt to taste Coarse ground pepper to taste 1/2 teaspoon of lemon juice, optional
Wash the lentils and soak for 2 or 3 hours in cold water to cover ( or use the quick cooking kind). IN a deep heavy pot, put the boiling water, sliced salt pork, bay leaf, and garlic. Cook slowly for 10 minutes. Sauté the onion in the bacon drippings or in butter in a small pan until soft. Add to the salt pork mixture. Drain the lentils well and add. Season to taste with a little salt and coarse ground pepper. Simmer, uncovered for about 1 1/2 hours or until the lentils are soft. Taste and correct the seasonings. Stir in the lemon juice, if desired. Serve with the salt pork slices on top. Serves 4 |
