| Southern Corn Bread
1 cup of white or yellow cornmeal 1/2 cup of sifted flour 2 teaspoons of baking powder 1/2 teaspoon of salt 1 1/2 cups of milk 2 eggs, separated 1 1/2 tablespoons of bacon fat or other shortening |

Preheat oven to 425ºF. Sift the dry ingredients into a bowl. Mix the milk, beaten egg yolks, and melted shortening and add to the dry ingredients, beating well. Beat the egg whites until stiff and fold them into the batter. Pour it into a well greased 8 inch square pan and bake at 425ºF. for 30 minutes. Variation: Corn sticks (12 corn sticks). Bake the corn bread recipe in hot greased corn stick pans at 425ºF. for 30 minutes.
