| Cream of Cauliflower Soup
1 head of cauliflower 1/4 cup of butter 2 tablespoons of onion, chopped 3 stalks of celery, minced 4 cups of chicken stock 2 cups of heavy cream 1/8 teaspoon of nutmeg 1/8 teaspoon of paprika 3 ounces of cheddar cheese, grated salt, to taste
Steam whole cauliflower (all leaves removed and stem trimmed). Cool until it can be handled safely. Break off florets. Put stems in food processor or blender with just enough of the steaming water to blend into a paste. Sauté onions and celery in butter until tender. Add chicken stock, nutmeg, paprika, and cauliflower paste, bring to a boil. Reduce heat and add cream and cauliflower, heat for 2 minutes, but do not boil. Serve with cheddar cheese as garnish. Serves 6. |
