| Stewed Tomatoes
8 large tomatoes 2 medium onions, optional 1 small green pepper, optional 2 tablespoons of butter 1/2 teaspoon of salt 1/8 teaspoon of fresh ground pepper 1 tablespoon of sugar bread crumbs or cornstarch
Plunge the tomatoes in boiling water for 1 minute, drain, and slip off the skins. Chop the tomatoes coarsely, and put them in a heavy pan. Chop the onions and green pepper and sauté in the butter until soft. Add the onions and green peppers to the tomatoes, bring them to a boil and simmer, covered, for about 25 minutes. Season with salt, pepper and sugar. Simmer a few minutes more, taste and adjust seasonings. Thicken the tomatoes with about 1/2 cup of bread crumbs or 1 tablespoon of cornstarch mixed with water. Use less thickening if you like the stewed tomatoes thin, more if you like them thickish. Serves 6 |
