| Scalloped Tomatoes #1
4 cups of stewed or canned tomatoes salt freshly ground pepper 1/4 cup of sugar 1 cup of soft bread crumbs 2 or 3 slices of bread butter
Preheat oven to 375ºF. Heat the tomatoes to boiling and season to taste with salt, pepper and the sugar. Grease a casserole or baking dish and put 1/2 the bread cubes in the bottom. Spoon 1/2 of the tomatoes over the bread cubes. Cover with the rest of the bread cubes and then the rest of the tomatoes. Butter the slices of bread, cut the in strips and lay the strips over the tomatoes. Bake at 375ºF. for 20 minutes or until the bread strips are toasted. Serves 6 |
