| Fresh Vegetable Casserole
1/4 pound of butter or margarine 1 1/2 cups of sliced onions 1/2 cup of diced green peppers 1 1/2 cups o carrots, cut in circles 1 cup of celery, cut in 1/2 inch pieces 2 cups of cut fresh green beans 3 tablespoons of minute tapioca 2 cups of canned tomatoes 1 1/2 cups of sliced mushrooms, fresh or canned salt and pepper to taste
Preheat the oven to 350ºF. Place the butter or margarine, onions, green peppers, carrots, celery and green beans in a large heavy pot. Cover, and cook over very low heat for 15 minutes. Add the remaining ingredients. Taste, and correct the seasonings. Pour into a large greased casserole, cover and bake at 350ºF. for 1 hour. Serves 8 |
