Cheese Grits Casserole

1 teaspoon of salt
4 1/2 cups of water
1 cup of quick grits
1/2 cup (1 stick) of butter or margarine
1/2 pound of grated sharp Cheddar cheese
2 cloves garlic, crushed
2 eggs
2/3 cup of milk
a dash of hot sauce
2 tablespoons of butter or margarine
2 cups of cornflake crumbs
paprika

Add salt to water, bring to a rapid boil. Slowly add grits and continue boiling 3 to 5 minutes.
Remove from heat, add 1/2 cup of butter, cheese and garlic, stir until butter melts.
Beat the eggs, stir in milk. Add to grits mixture. Add pepper sauce:, mix and pour into greased 2 1/2 quart casserole.
Dot top with 2 tablespoons of butter. Sprinkle with cornflake crumbs and paprika.
Bake in preheated 350ºF. oven for 1 hour. Makes 6 to 8 servings
