| | Southern Turnips
1 1/2 pounds of young white turnips salt freshly ground pepper 1 teaspoon of sugar butter
Peel the turnips and cut them into small pieces. Put them in a saucepan with enough boiling salted water to barely cover. Simmer, covered, until tender (10 - 30 minutes, depending on age of the turnips) Drain thoroughly. Mash the turnips well with a potato masher and season with salt, pepper, the sugar and plenty of butter. Serves 4. |
