Tomato & Basil Rice
1 cup of rice 1 cup of cold water 1 cup of tomato juice or low sodium tomato juice 1 tablespoon of butter or 1 tablespoon of butter 2 teaspoons of minced onion 1/2 teaspoon of dried basil
Combine all ingredients in heavy 3 quart saucepan. Turn heat to high until rice starts to boil. Stir once with a fork. Reduce heat, cover, and simmer 12 to 14 minutes until liquid is absorbed. You may have to add a bit more tomato juice if rice is not moist enough. Serves 4 |
