Spanish Rice
1 cup of raw rice 2 tablespoons of bacon or pork drippings 1 onion, chopped 1/2 green pepper, chopped 1 stalk celery, chopped one 8 ounce can of tomato sauce one 6 ounce can of tomato paste 1 bay leaf, crushed 2 cloves garlic, minced 1/2 teaspoon of crushed red peppers 1/2 teaspoon of thyme salt and pepper to taste 2 1/2 cups of boiling water 3 Italian sausages, hot or sweet, optional 2 Spanish sausages, hot or sweet chorizos, optional
In a heavy skillet, brown the rice lightly in the hot bacon or pork drippings, stirring constantly. Add the onion, green pepper, and celery and stir for a few minutes. Add the tomato sauce, tomato paste, seasonings and boiling water. Taste, and adjust seasonings. Lower the heat, cover tightly and simmer for about 35 to 40 minutes or until liquid is absorbed but rice is not dry. If necessary, add boiling water to prevent drying our. If you wish to use the sausage, sauté them, dry, cut into 1/4 inch pieces, and add to the rice for the last 10 minutes of cooking.
Leftover cooked rice may be substituted for the raw rice. Use 3 cups of cooked rice, reduce the boiling water to 1 cup, and simmer for 20 minutes. Serves 4 to 6 |
