Savory Southern Rice
1 medium onion, chopped 3 tablespoons of butter 1 cup of raw rice 1 teaspoon of thyme salt and pepper to taste 1 can of chicken broth or bouillon
Sauté the onion in the heated butter in a heavy skillet until soft. Add the rice and stir for 3 or 4 minutes to absorb the butter. Add the seasonings and chicken broth or bouillon. Taste and correct the seasonings. Bring to a boil, cover tightly, and reduce heat to very low. Simmer for about 20 minutes or until rice is done and all liquid is absorbed. Serves 4 |
