Fried Rice #3

1 1/2 tablespoons of oil, do not use butter
1 cup of raw rice
1/3 cup of pine nuts or slivered almonds
1 cup of chicken or beef stock or bouillon
1 small onion, chopped
1 small stalk celery, chopped
Salt and pepper to taste

Heat the oil in a heavy skillet and add the raw rice, stirring constantly over low heat until rice begins to change color, about 4 or 5 minutes. Add the pine nuts or almonds, and stir until rice and nuts are brown. Add the onion and celery, and stir until it is all very brown, but not browned. Bring the stock or bouillon to a boil, and add to the rice mixture. taste, and add the salt and pepper. Reduce the heat as much as possible, cover the skillet tightly and simmer very slowly for 30 to 35 minutes or until all liquid is absorbed. Add more boiling stock if necessary to prevent the rice from drying out during simmering. Serves 4
