Fluffy Rice
1 3/4 cups of boiling rice 3/4 teaspoon of salt 1 cup of raw rice
In a heavy pot bring the water and salt to a vigorous boil. Gradually pour in the rice, keeping the water boiling all the time. Stir once. Cover the pot tightly, reduce heat and cook over very low heat for 25 to 30 minutes or until all the water is absorbed and rice is dry and fluffy. Do not stir. If necessary to keep it hot, place the cooked rice in a colander over a little boiling water and let it steam. If desired rice may be dotted with butter and sprinkle with fine chopped parsley before serving. Serves 4 |
