Chinese Pepper Steak with Rice

1 beef blade or arm steak, 1 inch thick
1 clove garlic, minced
2 tablespoons of lard or drippings
2 onions, minced
2 large green peppers, cut into strips
1/2 cup of sliced celery
2 tablespoons of chopped pimento
1/2 cup of consommé or stock
Salt and pepper
2 teaspoons of cornstarch
2 tablespoons of water
1 teaspoon of soy sauce
3 cups of cooked rice

Cut the steak into strips, brown meat and garlic in lard. Add onions, green peppers, celery and pimento, add consommé. Season with salt and pepper. Cover, simmer for 40 minutes. Thicken with cornstarch blended with water and soy sauce. Simmer for 5 minutes. Serve with rice. Makes 4 servings
