Bob's Favorite Rice
1 tablespoon of extra virgin olive oil 1 small onion, chopped 1 tablespoon of pimentos, chopped 1 clove garlic, crushed 1/4 teaspoon of garlic powder 1/4 teaspoon of black pepper 1 cup of white rice 2 cups of low sodium chicken broth
Heat oil in a saucepan and sauté onion until it is soft. Add pimentos, garlic, garlic powder, pepper and rice. Stir until rice is thoroughly coated. Add broth and bring to a boil. Reduce heat, cover, and simmer for about 25 minutes or until rice is tender. Serves 4 - 5 |
