| | Turkey Drumsticks w/Tomatoes
2 turkey drumsticks, weighing 1 1/4 pounds each salt and pepper to taste2 cloves garlic, peeled and finely chopped 1/4 teaspoon of rosemary 3 tablespoons of wine vinegar 3 tablespoons of olive oil 5 anchovy fillets, finely chopped, optional one 16 ounce can of tomatoes, roughly chopped 1 tablespoon of capers 2 egg yolks juice of 1/2 lemon 1 tablespoon of butter
Rub drumsticks with salt, pepper, garlic, and rosemary. Pour vinegar over drumsticks, cover and marinate for 2 hours. Turn drumsticks several times while marinating. Heat oil in Dutch oven. Brown turkey on all sides. Add anchovies, if desired. Stir into tomatoes and capers. Simmer for 1 1/4 hours, adding more tomato juice if needed. Remove turkey meat from bone and cut into 1 1/12 inch pieces. Reheat turkey in sauce. Before serving, beat egg yolks with lemon juice. Stir in egg mixture and butter into sauce and cook, stirring over low heat until sauce is hot. Transfer to serving dish and serve hot. Serves 4 |
