| | Turkey Curry w/Almond Raisin Rice
1 1/2 cups of chopped unpeeled apples 2/3 cup of minced onion 1 clove garlic, minced 2 tablespoons of butter or margarine 2 tablespoons of all purpose flour 1 teaspoon of curry powder 1 1/2 teaspoons of salt 1/4 teaspoon of ground ginger 1 1/2 cups of turkey or chicken broth 2 1/2 cups of cooked turkey, cut up Almond Raisin Rice
Sauté apples, onion and garlic in butter until tender crisp. Stir in flour, seasoning and turkey broth. Cook and stir over medium heat until thickened. Add turkey, heat thoroughly. Serve with Almond Raisin Rice. Makes 6 servings
Almond Raisin Rice
1/2 cup of slivered almonds 2 tablespoons of butter or margarine 3/4 cup of light raisins 3 cups of cooked rice
Sauté 1/2 cup of slivered almonds in 2 tablespoons of butter until golden brown. Stir in raisins and rice, tossing lightly to combine. Heat thoroughly. Makes 6 servings |
