Leftover Turkey & Vegetables

3 tablespoons of butter
1 onion, chopped
3 large mushrooms, chopped
2 tablespoons of flour
1 1/2 cups of turkey or chicken stock
2 to 3 cups of chopped leftover turkey
1 cup of cooked vegetables, such as peas, corn, beans and carrots
1 tablespoon of chopped parsley
1/4 teaspoon of thyme
1/4 cup of heavy whipping cream
1/4 cup of grated Cheddar cheese
A pinch of paprika



Preheat broiler.
Melt butter in saucepan. Add onion and sauté until translucent. Add mushrooms and sauté for 1 minute. Sprinkle in flour, blending well. Add stock and bring to a boil, stirring constantly. Add turkey and any available cooked vegetables. Stir well. Add parsley, thyme and cream.
Spoon mixture into buttered baking dish, sprinkle thickly with grated cheese and paprika. Broil until crisp and brown all over. Serve with cooked noodles or boiled rice. Serves 4 to 6
