| Leftover Fried Goose with Apple Rings
8 slices of leftover breast of goose Salt and pepper to taste 4 to 5 tablespoons of flour 1 to 2 eggs, beaten with 1 teaspoon of oil 1 to 1 1/2 cups of fresh white bread crumbs 1/2 cup of oil 4 to 5 tablespoons of butter 2 cooking apples, peeled, cored and sliced into rings 1 tablespoon of sugar 1 cup of beef gravy 1 tablespoon of red wine vinegar 2 teaspoons of Worcestershire sauce
Season goose slices well with salt and pepper. Cover with flour, then dip in egg. Coat with bread crumbs. Heat oil in frying pan, then add butter. when butter is foaming, cook goose slices until golden brown and crisp all over. Remove, drain, and keep warm. Reheat fat remaining in frying pan, having removed any loose crumbs that may burn. Fry apple rings until golden brown, sprinkling on each side with sugar. Remove apples from pan. Combine gravy, vinegar, and Worcestershire sauce. Heat and season to taste. Arrange goose slices on platter. Surround with apple rings and serve with gravy. Serves 4 |
