| Herbed Cornish Hens #2
six 1 to 1 1/4 pound Cornish Hens 2 cups of herb seasoned croutons 1/2 cup of sliced pitted black olives 1/4 cup of lemon juice 1/4 cup of vinegar 1/4 cup of vegetable oil 1 clove garlic, peeled and crushed 1/2 teaspoon of thyme 1/4 teaspoon of salt
Preheat oven to 350ºF. Dry cavities of hens, but do not rub cavities with salt. Mix croutons and olives together. Stuff each hen loosely with 1/3 cup crouton olive stuffing. Fasten opening with skewers and lace shut with string. Place hens, breast side up, in ungreased, shallow baking pan. Mix lemon juice, vinegar, oil, garlic, thyme, and salt; pour mixture over hens. Bake, uncovered 2 hours, spooning lemon mixture onto hens every 20 minutes. Transfer hens to warm serving platter and serve. Serves 6 |
