Hawaiian Duck
3 pounds of duck meat cut into 1-inch cubes 1 cup of Real Lemon 3/4 cup of flour 3/4 cup of butter or margarine 1 1/2 cup of boiling water 3 teaspoons of salt 6 green peppers 1 1/2 cup of pineapple tidbits 5 tablespoons of cornstarch 1 1/2 cup of pineapple juice 3/4 cup of sugar 3/4 cup of vinegar 7 tablespoons of soy sauce

Marinate the duck for 2 hours in lemon juice. Dredge meat in flour; brown meat in butter. Add water and salt; simmer until tender. Cut green peppers into 1-inch squares; boil 10 minutes and drain. Add peppers and pineapple tidbits to meat. Combine remaining ingredients; cook until sauce is clear and thick. Simmer 5 minutes. Serve over cooked rice. More great Hawaiian Recipes ! |
