one 5 pound duck, cut up 2 tablespoons of flour 3 tablespoons of olive oil pepper to taste 1 medium onion, chopped fine 3 tablespoons of chopped fresh parsley 1/8 teaspoon of rosemary 1 teaspoon of thyme 1 clove garlic, minced 1 cup of red wine |

Dredge the duck with flour and sear well in oil. Remove pieces to a casserole and season with pepper. Add onion, parsley, rosemary, thyme and garlic. Pour wine over duck. Cover casserole. Place in 350ºF. oven and cook for 2 hours. Serves 6
