Baked Duck with Oyster Dressing

1 large duck
salt to taste
1 loaf bread
4 eggs, beaten
Leaves from 1 bunch celery, chopped
1 pint of oysters, drained



Place the duck and giblets in a kettle and add 2 quarts of boiling water and salt. Simmer for 1 hour, adding water, if needed. Drain the duck and giblets and reserve broth. Break the bread in small pieces. Add the eggs, celery leaves and oysters. Chop the giblets and add to bread mixture. Add enough hot broth to moisten and mix well. Place in a casserole. Place the duck in a roaster and add a small amount of water. Cover. Bake the duck and dressing at 350ºF. for 1 hour or until duck is tender. 6 servings
