Sweet Potato Pie #7
3 cups of cooked sweet potatoes, pureed 1 cup of firmly packed light brown sugar 1/2 teaspoon of cinnamon 1/4 teaspoon each of allspice, nutmeg, and salt 3 eggs, beaten 1/2 pint of half-and-half 4 tablespoons of butter, melted 1 unbaked 9-inch pie shell
In a bowl, mix all ingredients, except pie shell. Mound into unbaked pie shell; smooth surface with a spatula. Bake in a preheated 450ºF. oven 10 minutes; reduce heat to 350ºF. and continue baking for 20 minutes until wooden pick inserted in center comes out clean. Serve hot or cold. Makes 1 pie.
