3 large sweet potatoes, peeled, sliced, & boiled
2 sticks of butter
1 1/2 cups of sugar
4 eggs, beaten
1/2 cup of buttermilk
1 teaspoon of vanilla
2 homemade or pre-made pie crusts
Preheat oven to 300ºF. In large bowl mash potatoes while still hot . Add butter and mix well. Stir in sugar and eggs. Add milk and vanilla. Stir to combine. Pour into pie crusts. Bake for 1 hour. Serve hot or room temperature.
