Cajun Fig Cobbler

1/2 cup of butter or margarine
1 cup of all purpose flour
1 cup of sugar
2 teaspoons of baking powder
1 cup of milk
1 large egg
1 teaspoon of vanilla extract
Two 11 ounce jars of fig preserves  

Place the butter in a 2 quart baking dish. Bake at 375ºF. until the butter melts. Remove from the oven and set aside. Combine the flour, sugar, and baking powder in a large bowl. Add the milk, egg, and vanilla, stirring until smooth. Pour the battered into the baking dish, spoon preserves over batter. Bake at 375ºF. for 40 minutes, covering the dish with aluminum foil after 20 minutes. Serve warm with vanilla ice cream or whipped cream.
