| Icicle Pickle
1 1/2 gallons of cucumbers 2 tablespoons of alum 2 cups of salt
Slice the cucumbers across, soak in salt water 3 days. (2 cups of salt to a gallon of boiling water.) Soak in alum water overnight. (2 tablespoons of alum to a gallon boiling water.) Drain. Make syrup.
Syrup: 2 1/2 pints vinegar 5 pounds of sugar 2 tablespoons of celery seed 6 or 8 sticks cinnamon
Heat and pour over pickles each day for 4 days. Seal the 4th day. On the 4th day, heat cucumbers along with syrup. |
