| Old Fashion Applesauce Cake 2
2/3 cup of shortening 1 cup of brown sugar 1 1/4 cup of granulated sugar 3 eggs 1 3/4 cup of applesauce 3 cups of flour 3/4 teaspoon of salt 1 3/4 teaspoon of soda put in raisin water 1/4 c. 1/2 teaspoon of cloves 1/2 teaspoon of nutmeg 1/2 teaspoon of baking powder 1 1/4 teaspoon of cinnamon 1/2 teaspoon of allspice
Soak raisins in hot water reserve 1/4 cup water for soda to dissolve in. Mix and put flour in raisin and nuts if you wish. I mix this by hand and pat in greased floured pan and bake for 50-60 minutes in 9 x 13 inch pan or cupcakes. Makes real nice small cupcakes. |

FROSTING: 1 cup of brown sugar 3/4 stick margarine 1/4 cup of milk
Boil and bring to a boil, cook 3-5 minutes. Add powdered sugar to spread. Old Fashioned Applesauce Cake
1/2 cup of butter (real), at room temperature 1 cup of sugar 2 cups of unsweetened applesauce 2 eggs, slightly beaten 1 1/2 teaspoon of soda 2 1/2 cups of plain flour, sifted 1 teaspoon of cinnamon 1 teaspoon of nutmeg 1/2 teaspoon of cloves 1/2 teaspoon of allspice 1 tablespoon of cocoa 1 cup of raisins (light or dark or half & half) 1/2 cup of nuts, chopped (black walnuts best)
Preheat oven to 350ºF. Put raisins in heavy saucepan, cover with water, bring to a boil. Reduce heat immediately and simmer about 3 minutes. Pour in colander to drain. Sift all dry ingredients except soda. Cream butter and sugar, add eggs and beat until fluffy. Add soda to applesauce; add to egg mix. Add sifted ingredients, mix; add raisins and nuts. Pour into greased, and floured tube pan. Bake 45 to 50 minutes (until knife inserted comes out clean). If kept in airtight container, will keep up to 10 days to 2 weeks. |
