Garden Party Carrot Cake

2 cups of flour
2 teaspoons of baking powder
1 1/2 teaspoon of baking soda
1 1/2 teaspoon of salt
2 teaspoons of cinnamon
2 cups of sugar
1 1/2 cup of vegetable oil
4 eggs (or equivalent egg substitute)
2 cups of grated carrots
1 can (8 1/2 oz.) drained crushed pineapple
1/2 cup of chopped pecans

Mix all of the ingredients together. Blend well. Pour batter into tube pan. Bake at 350ºF. for 50 minutes. Cool in pan. Turn out on rack. When cool, frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1/2 cup of butter (or margarine)
One package (8 oz.) cream cheese
1 teaspoon of vanilla

Sift 1 pound confectioners' sugar. Add sifted confectioners' sugar gradually. Beat well. Serves 20.
