| | Cheese Latkes (Low Cal, Low Fat)
1/2 pound cottage cheese, dry curd or farmer cheese 3 eggs 3 tablespoons of matzo meal or wheat bran or wheat germ 1/2 teaspoon of salt 2 tablespoons of sugar, optional
Mix all ingredients together till smooth. Spray a non-stick griddle or skillet with vegetable cooking spray. Drop batter by large spoonfuls onto hot griddle. Cook till browned on bottom; turn over and cook the other side.
Serving Ideas : Serve with sour cream, jelly or apple sauce.
NOTES : To keep the fat and cholesterol down, you can substitute egg whites (2 for 1) for all or part of the eggs.
These taste a bit like blintzes. We like them without the sugar, but that's a matter of taste. (We don't like sweet blintzes either.) |
