Strawberry- Fig Jam
5 cups of figs 5 cups or less of sugar (depending on desired sweetness) 1 large package of strawberry Jell-O
Combine all ingredients in large pot on stove top. Bring to a boil and lower temperature. Simmer for 20 minutes. Pour into jelly jars. Makes 9 (6 ounce) jars of jelly. |

Spiced Strawberry Jam 2
1 quart of fully ripe strawberries 1/4 teaspoon of cinnamon 1/4 teaspoon of allspice 1/4 teaspoon of cloves 2 tablespoons of lemon juice 3/4 cup of water 1 box Sure-Jell
Prepare fruit; stem and thoroughly crush. Measure 2 cups into large bowl. Add spices and lemon juice. Thoroughly mix sugar into fruit, let stand 10 minutes. Mix water and pectin in small saucepan. Bring to boil and boil 1 minute, stirring constantly. Stir into fruit. Continue to stir 3 minutes. Ladle quickly into scalded containers, cover at once with tight lids. Let stand at room temperature for 24 hours. Store in freezer. Makes 6 (8 ounce) containers. Strawberry Jam 3
4 cups of frozen strawberries 2 cups of grape juice 6 tablespoons of corn starch 4 tablespoons of honey 3/4 teaspoon of lemon juice
Dissolve cornstarch in juice using wire whisk. Boil until clear, stirring often. Add rest of ingredients and cook until berries are barely thawed. Remove from heat and mash berries with a potato masher. Refrigerate. Servings: 4 cups. Strawberry Jam 4
2 cups of mashed strawberries (about 4 c. whole) 4 cups of sugar 3/4 cups of water 1 box Sure-Jell-O fruit pectin
Have child mash strawberries with potato masher. Then mix sugar into strawberries. Set aside mixture. Parent adds fruit pectin to water in saucepan. Bring to boil. Stir constantly. Boil 1 minute. Remove from stove. Add mixture to strawberries and sugar mixture. Mix until sugar is dissolved. Have child help ladle mixture into 4 (8 ounce) containers. |
