| Ginger Pear Preserves
4 cups of pears, peeled & coarsely chopped 2 1/2 cups of honey 1/4 teaspoon of salt 1 lemon, finely diced Ginger root |

Combine all ingredients except ginger root. Cook for about 15 minutes, stirring occasionally, until the mixture is of spreading consistency. Spoon hot into hot sterilized jars to within 1/2 inch from top. Add a small piece of ginger to each jar. Seal and process in a boiling-water bath for 5 minutes. Yield: 5 half-pints. |
