Green Bean Italiano

One 4 1/2 ounce package of brown and wild rice mix
2 tablespoons of butter or margarine
1 medium onion, chopped
One 16 ounce carton of sour cream
One 8 ounce package of cream cheese, softened
Three 16 ounce cans of French styled green beans, drained
One 4 ounce jar of diced pimiento, drained
One 2 1/4 ounce can of sliced ripe olives
1 teaspoon of dried Italian seasoning
One 8 ounce package of shredded mozzarella cheese
1/4 cup of grated Parmesan cheese
1/2 cup of Italian seasoned dried breadcrumbs

Cook the rice mix according to the package directions and set aside. Melt the butter in a Dutch oven over medium high heat. Add the onion, and cook until tender, stirring often. Stir in the rice, sour cream and the next 5 ingredients. Spoon the mixture into a greased 13 x 9 x 2 inch baking dish. Sprinkle with mozzarella cheese and Parmesan cheeses, top with breadcrumbs. Bake at 350 ºF. for 20 to 25 minutes or until the cheese is bubbly and lightly browned. Makes 12 servings
