| Sauerkraut Casserole 2 pounds of sauerkraut 1 large carrot, diced 1/2 cup of diced smoked sausage 1 chopped onion 12 peppercorns 1 cup of dry white wine 2 cups of diced smoked ham 1/2 cup of diced bacon 1 large apple, diced 1 large potato, pared and grated 1 cup of stock or water
Drain sauerkraut. Combine all ingredients and pour into a buttered 2 quart casserole dish. Cover tightly and bake in a 350ºF. oven for 1 1/2 to 2 hours. It should be fairly dry. Serves 6 hungry folks! |
