Pinto Bean Casserole

2 pounds of pinto beans
1 large onion, chopped
1 large green pepper, chopped
1/4 cup of bacon fat
1 tablespoon of salt
2 teaspoons of chili powder
2 teaspoons of celery seed
1 teaspoon of garlic powder
2 - 8 ounce cans of tomato sauce
1 - 4 ounce can of pimentos, chopped
1 pound of smoked sausage, sliced




Wash the beans, and place them in a large pot, and cover with boiling water. Simmer slowly until tender. Drain the beans well in a colander. Put them back into the pot and mash with a potato masher until pulpy. Set aside. Sauté the onion and green pepper in the bacon fat until tender. Add the onion, green pepper and drippings to the mashed beans. Stir in the remainder of the ingredients and mix well. Pour into a greased casserole dish and bake in a preheated oven at 350ºF. for 45 minutes. *Variation: Pinto Beans. Omit the sausage and serve as an accompaniment to barbecued pork or other barbecued meat.
