Sauerkraut  Casserole (Austria)

1/3 cup of finely chopped onion
2 tablespoons of fat
2 pounds of mixed beef, veal and pork, cut into 1 inch pieces
Two 1 pound cans of sauerkraut, drained
1 bay leaf, crumbled
Salt and pepper
1 cup of sour cream



Sauté the onion in fat, add meat. Fry for 30 minutes. Stir in sauerkraut and bay leaf. Simmer, covered, for 1 hour and 30 minutes or until the meat and sauerkraut are tender. Season with salt and pepper. Just before serving, stir in sour cream. Makes 4 - 6 servings
