Oatmeal Bread
1 cup of uncooked oatmeal 1 cup of milk, scalded 1/2 cup of boiling water 1/3 cup of shortening 1/2 cup of firmly packed brown sugar 2 teaspoons of salt 2 packages of dry yeast 1/2 cup of warm water 5 cups of sifted flour
In a large bowl, mix oatmeal, milk, and boiling water. Add shortening, sugar, and salt. Let stand until lukewarm. In a small bowl, sprinkle yeast on 1/2 cup of warm water; stir until dissolved. Stir into oatmeal mixture; add half the flour and mix until smooth. Gradually add remaining flour until dough is moderately stiff. Turn out onto lightly floured board and knead 7 minutes. Place dough into greased bowl, cover, and let rise 1 1/2 hours. Punch down; knead and shape into 2 loaves. Let rise until doubled in bulk. Bake at 400ºF. for 10 minutes. Reduce heat to 350ºF. and bake for 40 minutes longer. Remove from pan immediately and cool on wire rack. Makes 2 loaves.
