Cinnamon Coffee Round
3/4 cup of sugar 6 tablespoons of vegetable shortening 1 egg 2 cups of flour 2 teaspoons of baking powder 1 teaspoon of salt 1 cup of milk Streusel topping
Streusel Topping: 1/2 cup of sugar 2 tablespoons of flour 1 tablespoon of ground cinnamon 2 tablespoons of butter, or margarine, melted 3/4 cup of chopped nuts 1/3 cup of raisins (optional)
To make Streusel Topping: In a small bowl, combine all ingredients; stir until blended.
To make coffee cake: In a mixing bowl, cream sugar and shortening until light and fluffy. Beat in egg. In a separate bowl, sift together flour, baking powder, and salt. Alternately add flour mixture and milk to creamed mixture; blend well after each addition. Stir in half of the Streusel Topping. Spread batter into a greased 8-inch round baking pan. Smooth top of dough. Sprinkle with remaining Streusel topping. Bake in a preheated 350ºF. oven 30 to 35 minutes, or until a wooden pick inserted in the center comes out clean. Serve warm. Serves 6 to 8.
