Carrot Bread
3/4 cup of vegetable oil 1 cup of sugar 2 eggs 1 1/2 cups of flour 1/4 teaspoon of salt 1 teaspoon of baking soda 1 teaspoon of ground cinnamon 1 cup of grated carrots 1 cup of chopped dates 1 cup of chopped nuts
In a large bowl, combine oil, sugar, and eggs; blend well. In a separate bowl, mix together flour, salt, baking soda, and cinnamon. Alternately add flour mixture and carrots to sugar mixture; blend well after each addition. Turn batter into a greased 9 X 5-inch loaf pan. Bake in a preheated 350ºF. oven 1 hour, or until a wooden pick inserted in the center comes out clean. Cool in pan 10 minutes. Invert onto a wire rack to cool completely. Makes 1 loaf.
