Smoked Sausage Reubens Hot German Potato Salad Gingerbread w/Cinnamon Apple Topping
Smoked Sausage Reubens
8 slices of dark rye bread Reuben Sauce 6 fully cooked smoked sausage links, split lengthwise one 10 ounce can of sauerkraut, well drained 4 slices of Swiss cheese 1/4 cup of butter or margarine, softened
Spread one side of each bread slice with Reuben Sauce. Top each of 4 bread slices with 3 sausage halves, one fourth of sauerkraut and 1 slice cheese. Top with remaining bread. Butter both sides of sandwich. Preheat microwave browning dish at HIGH for 4 minutes. Place sandwiches on browning dish, and microwave at HIGH for 1 minute. Turn sandwiches over, microwave at HIGH for 3 to 4 minutes or until lightly browned and thoroughly heated. Serve warm. Yield 4 sandwiches
Sandwiches may be heated without browning dish; Eliminate the butter and toast bread in a toaster. Put sandwiches together, and place on a paper towel on a rack. Microwave sandwiches at HIGH for 3 to 4 minutes or until thoroughly heated.
Reuben Sauce:
1/2 cup of commercial sour cream 3 tablespoons of catsup 1 tablespoon of sweet pickle relish, drained 1 teaspoon of Worcestershire sauce 1/4 teaspoon of salt A dash of hot sauce
Combine sour cream, catsup, relish, Worcestershire sauce, salt, and hot sauce in a small mixing bowl; stir well. Cover and chill. Yield: 2/3 cup
Hot German Potato Salad
3 medium potatoes (1 1/2 pounds) 3 slices of bacon, diced 1/2 cup of chopped onion 1/2 cup of chopped celery 1/3 cup of cider vinegar 2 tablespoons of water 1 teaspoon of sugar 1 teaspoon of salt 1/4 teaspoon of caraway seeds 1/4 teaspoon of celery seeds 1/4 teaspoon of dried parsley flakes a dash of hot sauce
Rinse potatoes and pat dry; prick with a fork Arrange potatoes in a circular pattern on a paper towel in microwave oven. Microwave at HIGH for 8 to 10 minutes, turning potatoes after 4 minutes. Cool potatoes; peel and slice. Set aside. Place bacon in a 1 1/2 quart casserole. Microwave at HIGH for 5 minutes or until crisp. Remove bacon using a slotted spoon; drain on paper towels. Add onion and celery to bacon drippings. Cover with heavy duty plastic wrap, and vent to allow steam to escape; microwave at HIGH for 3 to 4 minutes. Stir well. Place remaining ingredients in a 2 cup glass measure, microwave at HIGH for 2 minutes or until mixture boils. Add potatoes, bacon, and vinegar mixture to onion mixture; toss lightly. Microwave at HIGH for 2 minutes or until thoroughly heated. Serve salad immediately. Yield 4 servings
Gingerbread w/Cinnamon Apple Topping
one 14 1/2 ounce package of gingerbread mix 2 medium size cooking apples, peeled, cored and sliced 1/2 cup of light corn syrup 1/4 cup of sugar 1/4 cup of butter or margarine 1/2 teaspoon of ground cinnamon 1/2 teaspoon of cornstarch
Prepare gingerbread mix according to microwave directions on package, using a 9 inch square baking dish. Place apples, corn syrup, sugar, butter and cinnamon in a 4 cup glass measure, microwave at HIGH for 3 to 4 minutes or until apples are tender. Add cornstarch to apple mixture; stir until smooth. Microwave at HIGH for 2 to 3 minutes or until thickened and bubbly. Cut gingerbread into 3 inch squares; spoon apple mixture over gingerbread. Yield: 9 servings
